The “Keep formatting” option reuses the font, size and colour of every text run and rebuilds the paragraphs, so the text is easy to edit. The “Identical to the PDF” option places every line exactly where it was. Graphics (lines, tables, backgrounds, logos) are kept as the page background. For scanned PDFs choose “Pages as images”.

How large can the files be?
It depends on your device memory. On a typical computer, documents of tens or hundreds of pages work fine.
